Peach Carrot Cake with Cream Cheese Frosting
Sweet Summer...
This summer is turning out to be a busy one (in a good way) and holy bananas is it going fast. This week, however, I finally had some time to slow down. Whenever I have a day off I like to try and make something just for the sake of making it... really dive head first into some shit I normally don't do. For my first "Day Off Trick" I tried to bake and surprisingly, I didn't f*ck it up!
I've recently gone down a little rabbit hole of cakes on the internet and considering the season (and Emmett's fruit preference) I wanted to make something involving peaches. I found a fairly simple recipe for a Peach Carrot Cake with Cream Cheese frosting where everything right down to the candied peaches on top was made from scratch. At first the idea of peach and carrot seemed a bit strange but it's actually pretty perfect. The batter was like crack and the cake was even better.
