This summer is turning out to be a busy one (in a good way) and holy bananas is it going fast. This week, however, I finally had some time to slow down. Whenever I have a day off I like to try and make something just for the sake of making it... really dive head first into some shit I normally don't do. For my first "Day Off Trick" I tried to bake and surprisingly, I didn't f*ck it up!
I've recently gone down a little rabbit hole of cakes on the internet and considering the season (and Emmett's fruit preference) I wanted to make something involving peaches. I found a fairly simple recipe for a Peach Carrot Cake with Cream Cheese frosting where everything right down to the candied peaches on top was made from scratch. At first the idea of peach and carrot seemed a bit strange but it's actually pretty perfect. The batter was like crack and the cake was even better. Check out the recipe from Call Me Cupcake and try it out for yourself. I have the attention span of a puppy so if I can bake it, you can to ;)
Enjoy the Flicks, my baby cactus forest, and the rest of the summer!
